What help do you need to understand that?
The Audio Jack - T is tip (for mono signal this is the output), S is Shield (this is usually GND). So you actually have it connected the wrong way at the moment.
Rotary switches have one or more common terminal (marked C on your schematic), and it switches between 1, 2, etc…
I’m not a simulation specialist, but yes - you can simulate audio in KiCAD.
I have trouble finding Spice models for the switch and the audio jack
You don’t need models for these.
The jack is a socket connector. The signal passes through or doesn’t pass through, depending if something is plugged in.
The switch can be simulated by applying your four signals one at a time into C.
