Its been a while since KiCAD 5 is out, why is on the flathub still some image showing KiCAD 4 and the version is not specified?
First I’ve heard of “flathub” and “flatpack”. After a quick look at their site I’d say you would have to ask this question of them. I don’t know who does their packaging.
Independent individuals, developers, whoever is interested in distributing some program in that package format.
Because no one updated it… volunteers welcome. 
The version should be v5.0.0, according to manifest.

I have installed KiCad flatpak and it’s version 5.0.0.
EDIT: I found this in my bash history:
flatpak install --from https://flathub.org/repo/appstream/org.kicad_pcb.KiCad.flatpakref
