When downloading updated versions, for example at https://downloads.kicad.org/kicad/macos/explore/nightlies – is it any Release Notes available for those specific updates available also?
This overview of commits made is probably the closest you can get.
They are not real “release notes” though.
They do not mention which commit goes to which KiCad version, and the “split by date” is not the same as the days that the nightlies are built. On your link for macos I see some days with two builds, and for windows it’s apparently common to have 5 or more builds per day.
If you want to be sure about the details you have to dive deeper into the git repository itself to see which commits have made it to your particular build.
