I’m new to the software when I add the components to the schematic editor I don’t seem to be able to see the values. But on the left side (component properties) the value exists.

First, those capacitors do not look like capacitors from KiCad’s standard libraries, so anything could be defined in them.
But to “fix” it, you can hover the mouse over such a part, then press e to edit it’s properties, and check whether the “value” field is set to visible in the “Show” column.

Most basic Symbols can be found in the Symbol Library named “Device”, including the Kicad version of a capacitor.
I saw that, but I wasn’t sure if wurth caps would be of the same layout or not.
Layout is not a concern of the schematic. You get to choose the footprint later.
Symbols have nothing to do with manufactured shapes of components. Mounting shapes for components are dealt with in Footprints.
First place your symbol. Next, attach a suitable footprint for your component to that symbol. The same symbol is used for polyester (non-polarised) SMD .001µF 25V or THT 4.7µF 500V capacitors. Only the footprint changes.
Except that polarised capacitors have a slightly different symbol.

The maximum voltage rating was to accentuate the size of the capacitor package and therefore its footprint. One is about the size of a match head, the other, bigger than a matchbox.
I hadn’t considered electrolytics, but, to avoid confusion, I’ve edited my above post.
