I have deleted a whole bunch of tracks with the intention of re-routing them. How can I display the rats nest of the unrouted tracks so I know where they are and dont miss any in the re-routing process?

Ratsnest should re-appear automatically. Make sure you have it enabled in the Appearances → Objects tab. If that doesn’t work update PCB from schematic (F8).
Fantastic - I just had to toggle it and the unrouted tracks appeared
