In PCBNew → search docked window, it is possible to add sorting by Referance, Value etc.? By click on column header.

And while the linked issue #11547 is also interesting and a good idea it’s the false issue. nr.11547 is related to the symbol fields table in the schematic editor.
To get a sorting feature in the pcbnew search panel you have to upvote search pane: no item sorting (#12614) · Issues · KiCad / KiCad Source Code / kicad · GitLab
