How can the internal pin text be moved away from being on top of the lines drawn to show internal connections to those external pins?

What are those colors for in the properties ‘Line Color’ and ‘Fill Color’?

They can’t.
The pin text is part of the pin properties. You can do many things with the pin and its properties. Double left click to view the available changes, including removing the pin name.

Line color is the color of the symbol border. In your case, it is the same red as the pins.
Fill color is the color inside the the symbol border. In your case it is transparent grey. Transparent colors allow anything inside the symbol outline to be seen. This transparency is achieved by selecting the “Fill with body background color” from the alternatives in the “Fill style”.

Also, you have two pins numbered “3” connecting IN and GND. Where’s the symbol from?

jmk: Apparently not. I set it to Black, but that’s being ignored and staying at the default Brown.

I suppose the most people simply set it to Invisible for the schematic, then add a additional pin title text string and place/orient it any way they want it to be. I seem to remember that both Eagle and Orcad allowed to directly manipulate the pin title title attribute string’s font/size and position/orientation, which is why I asked how to do it.

J. Pateman: Yes, there were two pins designated as pin 3. Right now that’s the least of the problems!

My above comment was explaining to what those properties referred, not how to change them.

Changing colors works for me.
In a previous post to you, I explained how to change colors over the entire Schematic (or PCB).

To change colors for an individual item, change the color in your above outlined rectangles.
Note: The color change will not show on the symbol in the symbol editor, only on the schematic. If you double click on the lines in the drawing, a graphic properties box will appear that will also allow you to also alter the color. This box shows a warning that the new symbol color is overridden by the preferences color ONLY in the symbol editor.
