I installed version 8.0 of kicad and unlike version 7, in the component selection window I see the electrical symbol in addition to the properties of the component which cover the symbol itself as seen in the attached image. Is it possible to change these settings?

In the Schematic, bulk changes can be made in:
Edit > Edit Text and Graphic Properties.
Tick the appropriate fields and the visible button.
For individual fields, right click on the appropriate field to open its properties and alter whatever.
For the PCB, the same, but in the PCB Editor.
Sorry, I misread your post.
In the footprint and symbol editors, the text can only be hidden by individually right mouse click on the symbol/footprint in question to open the text properties and removing or making the text invisible.
The big catch is next kicad library update, everything will be back again.
The only way to solve that is to transfer the symbols/footprints in question to personal libraries before editing.
As I mentioned in the beginning, it is easiest to leave them in the symbol/footprint editors and make alterations in the schematic and PCB editors.
I tried to install the new version 8.0.2 and I resolved.
