Where do I find the official documentation/tutorial of how “Power” inputs and outputs works in KiCad, please?

But normally you have the same documentation available from within the main menu in Eeschema under Help

The documentation itself is written in asciidoc, and then compiled to html, pdf and probably also epub.
The master document is in english, and there are translations to some 8 other languages, but I do not know the state of those translations.

There’s of course good information in the FAQ “Start Here” in both Schematic and Symbol sections.
