I came form other ECAD tool that when I make or reshape a copper polygon, the fill is automatically refreshed, and I’m able to see what did. In Kicad it seems is not possible to have this, I’m correct or I miss something else?

You are correct, in the current stable version (v6.0.x) you have to recalculate all zones manually after a modification.
For the upcoming kicad-version (v7, probably next year) a feature for automatic zone recalculation is implemented. You can experiment with this function already in the current nightly-development-version. Set checkbox for setting: Preferences–>PCB-Editor–>Editing-options–>Auto-refill zones.
