When I create a new project and then attempt to open the schematic file it just beachballs.
Have reinstalled and rebooted without it working.

Sorry, can’t help with Mac, but I’d like to know what is “beachballs”. I’m ignorant of that term.
it is the colorful spinner that pops up when an application is busy on a mac and not responding to user input.
Do you have an Intel mac around to test it with as well?
found a friend with an M1 and it worked perfectly for him so really not sure what to do about this on my mac
Same issue with Windows 10, however enough difference that I will open in a new topic.
I did have Kicad 5 on my mac initially and used extensively. Never upgraded to 6 but have now upgraded to 7. I’m wondering if there is an issue there?
Try removing the v5 personal config files as mentioned here:

I’ve seen a post talking about an issue going directly from V5 to V7.

Yes, there is an issue upgrading directly from 5 to 7 at the moment. If you make a backup copy of your KiCad 5 config files and then delete them (as mentioned above) it should work.
Hooray, Solved. I just deleted ~/Library/Preferences/kicad and restart Kicad. Accepted the defaults and everything is working. Thanks everyone for your help!
For me, The problem was I chose the option to base the symbol and footprint library list on the V5 version rather than using the default. Using the old library tables causes this problem. To correct I uninstalled Kicad, then deleted c:\Users\username\AppData\Local\Kicad and c:\Users\username\AppData\Roaming\Kicad (windows), then reinstalled and chose the default. I am not sure which of these steps was necessary, but just uninstalling and reinstalling did not work.
