Does anyone know if it is possible to generate an interactive PDF, so that when I select a component on my schematic it will have a drop down box that shows all the properties?
Possible? Sure.
If you mean if there is a solution out there for KiCAD that you can use ‘out-of-the-box’ - no idea, but highly likely not.

It looks like it doesn’t support board files but it works pretty well even with KiCAD 6 schematics.
