I believe none? The Kicad team doesn’t really vet the various plugins. They just make them easier to use. Talk to the specific plugin maker if this is important to you.
Otherwise, deal with the board makers directly if this is a concern to you.
It would all depend on the plugin you use, and what that plugin does.
I think that the Aisler plugin for example uploads the whole KiCad project to their website for PCB manufacturing. Other plugins may only use BOM info or whatever.
What is the difference?
If you have the Gerber files and the footprint type numbers, then recreating the schematic is a bit tedious, but otherwise simple job.
