During installation, all language options are greyed out and no help files can be installed.
How do I install them?

Help files are not currently bundled on Windows. They are available here https://docs.kicad.org but the majority of documentation has not been updated for v6.
OK. Are the .pdf downloads up to date for v6?

Up the date as in freshly built sure.
Actually up to date content? No. We have little to no documentation maintainers left.
