I want to have exposed copper on a PCB like in the photo attached. I want to do something similar making text in copper instead of the usual silkscreen.

Draw / copy what you want exposed on either the f.mask of b.mask layers. This works as a negative so anything drawn on these layers will have the solder resist removed.
