It was discussed here many times that it is not recommended to change default Grid spacing for EESCHEMA, and I generally agree with that.
However, many times I want to change the default Grid just to rearrange Text items (designators, values) on my schematic since the default values are not precise enough to my taste. I like the texts to be placed close enough to symbols that there’s no doubt which symbol these texts belong to (imagine some “busy” areas).
Maybe it would be a good idea to introduce finer grid for Text items, to which the exact placement is not important but they should just be “easy on the eye”. What do you think of that?
FYI, as a workaround you can disable the grid momentarily while moving the text (M) by keeping the Shift and Ctrl keys down. This way, you can place your text items very precisely.
Someone told me that here more than an year ago. Recently (month or two ago) I have written the same info here. I found I had to look at keyboard to move my hand from M to Ctrl+Shift and back. The solution worth checking is to use right-click to select Move.
