How to edit a single symbol from eeschema, the same way I can edit single footprints from pcbnew, without changing anything in the main library? Oftentimes I need to do this to suppress ERC warnings or errors caused by incompatible pin types.
Not possible as it stands.
You will have to create your own symbol library to do that.
In symbol editor just create a new library and add it to your library path.
Then you copy the symbol(s) over to your new library.
In eeschema select a symbol hit Ctrl+E to edit and then save it into your own library.
