Having the hypothetical signals A, B and C, how should I name them so that they can be used with the differential pair function? I know about the +/- and _P/_N scheme, but that only works for pairs, so how to do it with an odd number of traces?

The differential pair functionality is just for pairs. What are you trying to do?
To be clear the differential pair router only routes 2 traces according to the spacing and width you provide the tool, If your wanting to route a matched length bus, currently you have to route each trace then use the length tuning to trim it in,
