For almost all vias I place (on >=4 layer boards) I go into track and via properties and change the “annular ring” setting from its default value of “all copper layers” to instead be “start, end, and connected layers”. I do this to minimise unnecessary disruption to the reference planes.
Is there a way to set this as the default so I don’t have to change it on every via manually?
Unsure about default, but in v6 you can use Tools → Removed Unused Pads to perform this task globally. I think v7 is having the concept of pad stackup more defined so it should available then
