Note for future me and others who may have this problem:
delete the sym-lib-table file in your project directory and also the sym-lib-table in /home/(user)/.config/kicad/sym-lib-table
you may also have to chown /usr/share/kicad to your user and group
sudo chown -R username:username /usr/share/kicad
