I have additional fields in EEschema, and I can see them in the netlist, I would like to pick them up in PCB_NEW and access them from its plugins. Can I?
If you want I can add more details, but I think that explaining my complex problems is a waste of time, so let me know!

As far as I understand, at present only some of the fields in eeschema are transferred to Pcbnew (for now). I think this Gitlab issue might be somewhat related to what you are asking: https://gitlab.com/kicad/code/kicad/-/issues/5408 (that issue focussed on generating a BOM in Pcbnew using the fields in eeschema but the back-end reason is similar).
