as it can be seen in that short video, I can only add a via in certain parts of the tracks. Is there a way to disable this behavior? What is the use of this anyway?

I’ve seen most things in KiCad, but it’s not clear to me why KiCad refuses to place a via at that location. KiCad V8.0.4 refuses to place via’s in this way if they result in a clearance violation, but if I do this on my own Linux box, KiCad shows a yellow infobar at the top of the PCB editor for a few seconds.
I see it’s a 6 layer PCB. Are there any items on other layers that can interfere with the via?
You can use this icon in the left toolbar to view your tracks in outline mode. This can help to see whether there is anything under that big fat track that can interfere.
And what does this _autosave mean in the statusbar at the bottom?
Another option is to first place a via in another location, then use m to move it to where you want, and then run DRC to see whether it has anything to complain about. Moving always works, even if it creates DRC violations.
Looks like it’s breaking the trace and putting in a vertex to the center of the Via.
I tried this on my Mac, and found that holding down the command+shift keys when clicking to place the via stops this behavior.
I don’t know what the Linux or Windows equivalent modifier keys are.

Rerouting the track so the via is in the center of the track was also new to me. On Linux it can be disabled by holding the shift key while placing a via.
I interpreted the question as being a failure to place the 3rd via at around 12 seconds into the video.
I didn’t attempt to place a third via, just hit Escape about 12s.
I just tried holding Shift and it will not bend the track (I’m in Windows at the moment will try in Linux later).
