I was trying to import the 65816 CPU into KiCad but I couldn’t find it anywhere in the symbol browser. I could make it myself, but I wonder if there are other missing symbols. Any fixes that you know about?
There are probably more missing symbols than found symbols. 
With so many parts in the world it’s more likely that a randomly selected part isn’t in the KiCad libraries.
But do a search for 65816 projects. It’s possible someone before you used KiCad for theirs and made a symbol.
Adding nearly 40 year old microcontrollers to libraries is a low priority., though it would appear that you can still buy them
