These are ground planes. So it should have showed me they were unconnected. The issue was, as @pualvdh pointed out, I had errors disabled without realising!
Not really, but software can go only so far preventing users making obvious mistakes. Hopefully you remember next time.
I would not dare to presume one nor the other
KiCad asks you whether it should re-fill zones when you create Gerber files. In some cases it would be nice if it does DRC too, but in other cases you just want to do a quick check of an incomplete project and such things would be a nuisance. I guess the big wait is for the cam manager. From what I understand, the idea is that you can manage different sets of outputs beforehand, and then simply choose what sort of output you want to generate. Until then, working with a checklist may be your best option.
