Now I see why KiCad would automatically add a 1 to each new refdes.

A portion of this BOM list can be added to a corner of the schematic page.
If you look at the BOM list and see ONLY C1 on the list, then that states there is only 1 C in the schematic. If the BOM list is {C1 - C12} then there are 12 capacitors of the same effective part number on the schematic drawing.
