I’m using KiCAD 5.0. On several older version boards, the components are either missing or hidden. How do I get them back?
What do you mean they are missing or hidden? Can you share a screenshot?
As you write in the layout category i would assume you are in pcb_new. Is it possible that you disabled either the visibilty of some layer or of some items? (Check the right sidebar. Both the layer and items section)

I have recently upgraded from 4.0.7 to 5.0 and also had some small issues, quickly solved with the help of @Rene and other users like @pedro.
Unfortunately i cannot say anything about Kicad versions prior to 4.0.7 nor about nightly builds.
Summary of my experience (and Rene’s advice): do <> install 5.0 over the previous versions; save previous version libraries (schematic symbols) and models (footprints+3d models, a couple GB of disk space) instead, then uninstall the old version before installing the new one, then keep old libraries and models separated from the new ones; I suggest to avoid using the environment variables (disabled by default during installation of 5.0; if you had them enabled kill them before installing 5.0). Projects keep a local symbol and models library within themselves, which also can be helpful; I preferred to get rid of it and edit my projects (luckily just a handful) to use 5.0 libraries.

I experienced the same shock opening my 4.07 Layout with Version 5. But then I discovered these Parts were simply switched off in the Layer Manager. Maybe this is too simple an advice - but who knows …
